In the current version of The King of Fighters (KOF) games, each team consists of four players instead of the three-character teams in older games. Before each match, the player chooses three characters to participate in the fight. The fourth member is known as the Striker, who can be called upon during battle to help the player's character execute one of their special moves against the opponent. The player can only summon a Striker a limited number of times per match, which is indicated by the number of "Strike Bombs" displayed at the bottom of the screen.

The Advanced and Extra combat styles from The King of Fighters ’98 have been removed. The game now features a single playing style modeled after the Advanced mode of the previous game. In this style, players build up their power bar by attacking opponents or completing special actions. Depending on the button combination used, players can now select between two enhanced states during battle.

In Counter Mode, the player's offensive abilities are enhanced, enabling them to continuously use their character's Super Special Move. Additionally, they can transition from a Special Move to a Super Special Move in a combo using a "Super Cancellation Attack" or a "Moving Attack." On the other hand, Armor Mode increases the character's defensive capabilities, enabling them to withstand more damage from the opponent. However, Super Special Moves cannot be used while in Armor Mode.

After the battle ends, the player's performance is evaluated and they are given a score. If they achieve a high score, in arcade mode they will be given an extra fight after defeating the final boss. The updated edition of The King of Fighters: Evolution includes three additional stages and introduces two new characters that can only be used as Strikers.

Kyo Kusanagi, Athena Asamiya, Goro Daimon, Billy Kane, Ryuji Yamazaki, Chizuru Kagura, Syo Kirishima, Alfred Airhawk, Vanessa, Seth, Fiolina Germi, and Gai Tendo are the new Strikers in different outfits. The game is also able to connect with the Neo Geo Pocket Color game The King of Fighters: Battle de Paradise. Points earned in Battle de Paradise can be transferred to The King of Fighters '99: Evolution to aid in leveling up the Extra Strikers more quickly.
